Keto Chicken And Eggplant Sheet Pan with Tzatziki Sauce

Is there anything better than a one-pan dish with vegetables, chicken, and cheese? The Keto Chicken and Eggplant Sheet Pan with Tzatziki offers the Greek flavors of tomatoes, oil, and eggplant in a unique way.

 

Serve it with tzatziki sauce made from cucumbers and mayo and you’ll be in awe at how delicious the dish is. With this recipe, we are going to prepare keto chicken and eggplant sheet pan along with low-carb Tzatziki sauce.

 

Ingredients of Keto Chicken and Eggplant Sheet Pan

 

  1.  Chicken Thighs

Chicken thighs are high in fat which is great if you’re on a keto diet. It has absolutely 0 carbs. Moreover, chicken thighs add a flavorful taste to the dish. The dark meat has a more intense taste.

 

Chicken thighs are available bone-in and boneless, as well as skin-on and skinless, and you can cook them however you like. In this recipe, we'll bake the chicken thighs.

 

  1. Eggplant

 

Eggplant is completely keto-friendly and can be safely included in your keto diet meal plan. Although eggplant has a relatively high carb count, it is low in net carbs because it is rich in dietary fiber.

 

However, when you’re using eggplant in your recipes, you need to be considerate about the portion you consume.

 

  1. Tzatziki sauce

Approximately 1g net carbs can be found in 2 tablespoons of tzatziki sauce. Tzatziki sauce can be enjoyed as a dip as well as a topping for keto dishes. The Tzatziki sauce is very easy to make because you require a few simple ingredients such as yogurt, cucumber, and mayo.

 

 

Keto Chicken and Eggplant Sheet Pan With Tzatziki Sauce

Preparation time: 20 minutes

Cooking time: 35 minutes

Servings: 4

Carbs: 11g

Fat: 72g

Fiber: 5g

*Depends on the carbs in the yogurt you choose.

 

 

You’ll need:

For Tzatziki sauce:

 

  • ½ cup yogurt
  • 2 oz. cucumber
  • 2 garlic cloves
  • ¼ cup mayo
  • Salt and pepper to taste

 

For Marinade:

  • 1 squeezed lemon
  • ⅓ cup olive oil
  • 1 tbsp. Dried oregano
  • 2 garlic cloves
  • 2 tsp. Chili flakes
  • Salt and pepper to taste
  • ½ tsp cinnamon powder

 

Chicken:

  • 2 lbs. Chicken thighs
  • 8 tomatoes
  • 1 3/4 cups of eggplant

 

For Serving:

  • ½ cup olives
  • ¼ cup feta cheese
  • ¼ cup chopped parsley

 

 

Instructions:

  1. Prepare the Tzatziki sauce by taking a bowl and mixing the cucumbers, yogurt, mayo and garlic. Add salt and pepper to taste and then set it aside.
  2. Set the oven and preheat to 375. Take a large bowl and add the ingredients of the marinade and combine.
  3. Add chicken thighs and eggplants to the marinade and mix them to combine. Keep the chicken away for 10 minutes.
  4. Take a baking tray and line it with a large sheet pan with parchment paper. Add chicken, eggplant and tomatoes to the pan. Bake it for 35 minutes until the chicken’s skin turns crispy.
  5. Remove the baking tray and then serve the dish by topping it with olives, cheese and chopped parsley.

 

If you want the tomatoes to be soft, you can microwave them for 10 minutes and add them fresh once the dish is ready.
