A quick and easy recipe for Keto Creamy Chicken Broccoli Casserole. It's a quick dinner idea for a weeknight feast that's rich, cheesy, and delicious.

The cheesy chicken casserole recipe is an easy Keto recipe that you can bake immediately or prepare in advance. We love how creamy and rich this recipe is! The dish is easy to make, and since it's loaded with chicken, broccoli, and cheddar cheese, carbs aren't an issue.

 

Ingredients of Keto Chicken Broccoli Casserole

 

  1. Cauliflower

The ketogenic diet involves consuming keto-friendly foods like cauliflower. While it's not exactly the best source of fat or protein, it's a low calorie, low carb vegetable that's loaded with nutrients.

 

Adding cauliflower to your keto plan is just as important as meeting your protein and fat macros. When it comes to vitamins, minerals, and other essential micronutrients, cauliflower has it all.

 

You can use cauliflower in keto-friendly recipes such as mashed potatoes, rice or casserole dishes.

 

  1. Broccoli

Besides being a healthy vegetable, broccoli is also very nutritious, which makes it ideal for the keto diet. As well as vitamins, minerals, fiber, and even protein, broccoli contains many other nutrients. There are 3 grams of net carbohydrates in 1 cup of broccoli.

 

You could enjoy a delicious and nutritious broccoli casserole without worrying about your carb intake. For this recipe, we’re going to use fresh broccoli for great flavor.

 

  1. Chicken

This recipe is great because you can use leftover chicken, as well as fresh chicken. Prepare the shredded chicken in the microwave or on the stovetop.

 

For those who don't have leftover chicken, you can stop at the supermarket and grab a rotisserie chicken, or buy precooked, frozen chunks of grilled chicken.

 

Keto Chicken Broccoli Casserole Recipe

Cooking Time: 20 minutes

Total time: 40 minutes

Serving: 6

 

You’ll need:

 

  • 2 cups shredded chicken
  • 2 tbsp. Butter
  • ½ chopped onions
  • 1 garlic clove
  • 1 tsp seasoning
  • 3-4 cups Broccoli
  • 2 cups cauliflower rice
  • 2 cups grated cheddar cheese
  • ¼th cup cream
  • 8 oz. cream cheese
  • ¾ cup chicken broth

 

Instructions:

  1. Set your oven and pre-heat to 375 °F (190 °C)
  2. Take a large skillet, add 1 cup of water and bring it to boil. Simmer the broccoli for a few minutes. The broccoli should be tender and crisp after 5 minutes. Drain and separate the broccoli.
  3. Heat butter in a pan on low-medium heat, and then add chopped onions, minced garlic cloves, and Italian seasoning. Sauté until the onions are golden brown.
  4. Add cream and chicken broth. Simmer it for 2 minutes. Set the pan aside and add 1 ½ cups of cream cheese.
  5. It’s time to combine shredded chicken, cauliflower rice, broccoli and the sauce that is ready. Take a 9 x 13” baking dish and transfer the casserole. Top it with the remaining cream cheese.
  6. Bake it for about 20-25 minutes and serve it.

 

You can store the Keto Chicken Broccoli Casserole for up to 4 days.
