These keto chocolate chip cookies are easy to make and contain ingredients that are readily available. They are absolutely tasty and your kids will definitely love them.

 

Ingredients of Chocolate Chip Cookies

 

  1. Almond flour

Since traditional flour doesn’t follow the rules of a keto diet. Therefore, we are going to use almond flour as an alternative. Almond flour cookies contain a high amount of fiber and healthy fats, which makes them extremely filling.

 

Several reasons make almond flour a must-have for the keto kitchen: it's a great source of vitamin E, magnesium, iron, manganese, calcium, and potassium. In addition to the nutty flavor, it also lends a moist, slightly dense quality to baked goods.

 

  1. Chocolate chips

Chocolate chips that are sugar-free are typically low in carbohydrates. The low carb content of these chocolate chips, along with the fact that there is no sugar in them, makes them ideal for those trying to live a healthier lifestyle and for those on the ketogenic diet.

 

You can easily find it in the stores. If you can’t find sugar-free chocolate chips, you can go for keto-friendly dark chocolates that can be cut into chunks and sprinkled on top.

 

  1. Xanthan gum

Xanthan gum is an optional ingredient, but it basically adds a chewy texture to the cookies and helps the flour hold together. The cookies won't beak if you add Xanthan gum.

 

  1. Erythritol

Erythritol is a perfect substitute for sugar and can be used in baking. A sugar substitute with about 70 to 80% of the sweetness, erythritol has zero calories. The amount of carbohydrate per teaspoon is 4 grams, but the net carbohydrate is zero, so it doesn't count towards your daily carb allowance.

 

 

Keto Chocolate Chip Cookie Recipe

 

 

Preparation time: 10 minutes

Cooking Time: 10 minutes

Total time: 35 minutes

Serving: 12

Protein: 4g

Fat: 16g

Carbs: 5g

Fiber: 3g

Calories: 180 Kcal

 

 

 

 

You’ll need:

  • ½ cup salted butter
  • ¾ cup Erythritol
  • 1 egg
  • 1 tsp. Vanilla essence
  • 1 ½ cup almond flour
  • ½ tsp. Xanthan gum
  • ½ tsp baking powder
  • ¾ cup sugar-free chocolate chips
  • ¼ tsp. salt

 

 

Instruction:

  1. Set your oven and preheat to 360 F (180C)
  2. Take a saucepan and melt the butter on a low medium flame. Now pour the melted butter in a bowl and add erythritol. Mix them evenly.
  3. Add egg and vanilla essence and beat it for another 10-15 seconds
  4. Add baking powder, almond powder, xanthan gum and salt. Mix well once combined.
  5. Press the dough together and take it out of the bowl. Using your hands or a silicone spatula, knead in the chocolate chips.
  6. Put the dough on a lined baking tray divide and shape it into 12 portions using an ice cream scoop.
  7. Bake it for 10-12 minutes. Once done, remove the tray from the oven and let the cookies cool for about 15 minutes before serving.

 

You can store the cookies in an airtight container for 7 days.
